Three days ago the boyfriend and I had a meat dinner. Quite literally. To start off we had a steak appetizer with balsamic glaze. We then continued with a Hoisin Barbecue Meat Platter, consisting of 4oz of chicken, 4oz of steak, and 4oz of pork. That’s right. 12 oz of meat between the two of us in the entree alone.

I love meat. I love bacon. And chicken. And pork. And beef. Give me a bison burger and I will probably give you a kiss. I love meat especially in the winter when it’s cold outside. Stews and meaty crock-pot dishes are just as much appreciated as chicken breast with vegetables or Spaghetti Bolognese. It’s different in the summer. I eat more salads then.

To kind of sort of balance out all the meat (Thanksgiving turkey anyone?), it’s good to have some vegetarian dishes every once in a while. Soups are good. Trader Joe’s roasted red pepper soup is delicious. As well as the carrot ginger soup. Add in some vegetables, top off with some homemade croutons (cut bread in crouton size pieces, toss with olive oil, salt, pepper and some herbs, and toast for 10 min at 375degrees Fahrenheit) and you have made a delightful healthy and warming meal.

Although I just told you how much I love meat I do also enjoy vegetarian dishes. They have to be flavorful, though. Lots of herbs and spices. We have a collection of hot sauces at home. I made a box for just the hot sauces.

Some things though are fine without hot sauce because the spices already make them taste delicious. Fortunately Indian dishes have a lot of spices and fresh herbs so that there isn’t any need for drowning them in spicy sauces.

Alright, let’s do this:

First roast some squash. Pretty much any kind works. Try butternut squash, acorn squash, yellow or green squash!

Now brown the onions in a rather large pot.

Add some garlic ginger paste to the browned onion. Some fancier grocery stores seem to carry this and it’s also available online or in specialty indian food stores.

To get some spice add some fresh chopped up green chilis. If you like it spicy keep some of the seeds as that’s where the majority of the heat is located…

Add two tablespoons of the basic curry spice mix to the pot and then cut a couple potatoes into small pieces so they cook thoroughly rather quickly.

Add some cauliflower (or broccoli if you prefer the green cabbage version) and peas. Let this simmer for a couple of minutes while you chop up the fresh dill and cilantro and cut a lime in half.

Add the herbs to the pot and squeeze in some lime juice.

Let the vegetables simmer for a couple more minutes and take the squash out of the oven. Peel off the skin. Add to the pot and serve hot.

Enjoy your warming, vegetarian, indian dish!

Curry is healthy. Some studies have shown that it can lower a person’s risk of developing colon cancer significantly. Curry has also been shown to prevent Alzheimer’s. The rates of people with Alzheimer’s are about four times lower in India than in the United States.

Turmeric, one of the main ingredients in Curry, has antiseptic properties and is quite useful for skin irritations. It has also been shown to be effective in the treatment of arthritis and reduced the joint swelling many arthritis patients experience. Turmeric also boosts the benefits of certain chemo therapy drugs and lessens the side effects. It is a natural pain killer and Cox-2 inhibitor (anti-inflammatory).

Needless to say the spices that curry consists of are very healthy in many ways.

A few weekends ago I was lucky enough to be part of a lesson in cooking indian foods. The boyfriend’s mom has a friend who invited us for an evening that included directions on how to prepare and cook multiple authentic indian dishes.

FYI: There is no such thing as a spice called curry. It’s a mix. The curry base usually consists of Turmeric, Cumin and Coriander. Depending on the region that a particular curry mix originated from and depending on individual taste, other spices (cinnamon, cardamom, chili pepper etc.) may be added to the basic mix.

Since it’s a spice mix making this is more about proportion than about exact measurements. This mix can be used to add to Dal, chicken, beef, vegetables or basically anything that might benefit from a curry flavor. Add some oil or ghee (clarified butter), tomatoes, coconut milk, or yogurt to get more sauce and you have a healthy and flavorful dish.

This is the basic mix 0f spices to create an authentic curry:

1 part Turmeric

1 part red Chili Powder

2 parts Cumin Powder

4 parts Coriander Powder.

If you intend to use this a lot, you can make a large batch (it keeps for about 6-8 months).
A large batch as in 1/8 of a cup of turmeric, 1/8 of a cup of chili powder, 1/4 cup of Cumin Powder, and 1/2 cup of coriander. Keep it in a zip lock bag or a tupperware container until you’re ready to use it.

Or if you just kind of want to try this whole indian curry thing make the mix based on teaspoon measures. For example 1/2 teaspoon of turmeric, 1/2 teaspoon of chili powder, 1 teaspoon of cumin, and 2 teaspoons of coriander.

Easy enough, right?

I might have mentioned this ones or twice before: I loooove ice cream. You know how they say that the way to a man’s heart is through his stomach? The way to my heart is to feed me ice cream. Preferably extravagant flavors or flavor combination. And that’s exactly what Capogiro, a Philadelphia Gelateria, has to offer. Now, you might think that there is no way that the ice cream at some ice cream shop in Philadelphia is better than gelato in Italy.

BUT, guess what? According to National Geographic’s list of best places to eat ice cream, Capogiro is now officially THE best place to eat ice cream for anyone who would like to experience ice cream flavors beyond the traditional chocolate, vanilla, strawberry combination.

So, since I have a slight obsession with ice cream and the boyfriend currently resides in Philadelphia, I educated him about this wonderful place in rather close proximity to his current home and we went to eat ice cream.

Avocado, Banana Foster, Burnt Sugar, Cranberry and Heirloom Apple, Lime Cilantro, Thai Coconut Milk, and Turkish Coffee are just some of the rather unusual flavors. In addition to some classic flavors Capogiro also has offers some rotating and more seasonal flavors like Saigon Cinnamon, Quince or New Orleans Nog (Eggnog spiked with Southern Comfort).

I went with a Lime Cilantro and Thai Coconut combination. It was quite a good interplay between the flavors.

Another great aspect about this ice cream shop was that the atmosphere was quite nice and in addition to getting ice cream (which in not so sunny winter time Philadelphia can be a rather bad idea) one could also get hot chocolate, tea or coffee. We shared a cup of coffee, which was quite good, too. Based on the heavy coat I was wearing INSIDE (??) that day must have been pretty cold, so I’m pretty sure any kind of hot beverage would have been great.

Capogiro has quite a good selection of beverages, anything from Lattes over cappuccinos and hot chocolate to specialty teas. I’d definitely prefer coming here than going to Starbucks or Dunkin Donuts. But that may have something to do with the fact that there is a huge selection of flavors and I intend to try every single one of them.

If you ever come across this place in Philadelphia, go inside and try some (they provide samples, too!)

Buon Appetito!

Just over a year ago, I began working with Excellence in Exercise through their corporate wellness program at the company I work for, Cbeyond. Excellence in Exercise is a locally run fitness management group which specializes in personal training, facility management, and corporate wellness. They recently launched a new website, so I wanted to use this opportunity to share my experience and pass their information along!

Last year, I started taking yoga classes with Dorie and Glenn, and have continued with Julie. If you’ve never done yoga before, working with Julie is beneficial, because she can provide an experience with a wide range of poses, as well as introducing modifications as you get more experienced. Glenn works on strength based yoga, and Dorie focuses more on a one breath yoga style. Each of these constantly challenges my flexibility and strength, and always keeps me guessing on what new poses we will try!

I’ve also worked with Cherri in kickboxing. She brings an amazing amount of energy to the workout, and by the end of it, not only are my legs tired, but my arms and core have gotten some good work as well. No matter how exhausted I get, Cherri keeps me pumped up though, and you can tell she really enjoys being there.

Some of the other personal trainers I’ve seen are Kristian, JC, and Jason and although I have not worked with them personally, everyone who has gives nothing but raving reviews. Having trainers who are so personable not only make the workouts go by faster, but they make you want to come back for more. When you can leave the gym worn-out but happy, I would call if a successful experience!

Recently, I had the opportunity to talk with Tanya on healthy eating for the holidays. She gave some great tips for how to maintain your routine before attending holiday parties, as well as what entrees to gravitate towards during parties, and even provided some good ingredient substitutions for when you are cooking this season.

I would encourage you to reach out to Excellence in Exercise for their personal training offerings, or if your company is interested in opening a corporate training facility, see what they can provide your group! They definitely provide well-rounded knowledge with qualified staff for all interests. In my time working with the group, I couldn’t have asked for a better experience!

Today is November 1st. The Northwest got hit by a freak snowstorm that left over 3 million people without power. Pumpkins are everywhere. Even in Atlanta it’s cold at night now. I am not tempted to have Yoforia every single night, because it’s just too freakin’ cold. I eat soups all the time. Hot soups. I take hot baths and ask for drinks to be without ice. Sweetpotatoe casserole sounds delicious right now. I dressed up like a zombie last weekend and had conversations with the green lantern, a mermaid and a goldfish. All in one night.

It’s halloween, of course. Remember when Halloween was scary and not slutty? Yea, me neither. So, I decided to bring back the scary Halloween costume. It’s more fun.

Why am I telling you all of this, you wonder? All this is how I know it’s fall.

Balls to wall – all the way fall.

What is there to bake in fall? Aside from the traditional anything-as-long-as-it-involves-pumpkin. I always like cookies. Duh! Now, chocolate chip cookies are nice, they are a good comfort food and they are easy and good to take to other people’s houses. Because you don’t have to worry too much about them getting smushed. Well, chocolate chip cookies aren’t very fancy. These cranberry almond cookies – kind of sophisticated. And very much hint at it being fall, considering that there are cranberries in them.

Here is what is needed to make these cookies:

Butter, White Sugar, Brown Sugar, Vanilla Extract, Flour, Baking Soda, Salt, Eggs, Toasted Almonds, Cranberries.

These cookies are pretty much made in only four steps:

1. Brown butter until it starts to crackle and smell delicious.

2. Combine sugars and butter and then add in the egg & egg yolk, as well as the vanilla extract.

3. Combine the flour, baking soda and salt.

4. Mix all of them together.

And there you have the delicious browned butter cookie base.

Now add in the cranberries and toasted almonds. And roll pieces of dough into little balls.

Place them on an ungreased cookie sheet and then bake the cookies. Donzies.

I used to not like pizza because I don’t really like cheese. I know, I know “how can you not like cheese?” is what you’re thinking, right? Well, I eat Mozzarella cheese, but only the good kind. The good soft buffalo mozzarella. And guess what? That’s what they use at Antico pizza. That and lots of other great and fresh ingredients.

Antico Pizza has been around for a while and I thought the majority of Atlantans has been there or at least heard about it by now. A few days ago, though, I went with a group of about 7 people and 5 of them hadn’t been to Antico Pizza, which led me to realize that I should write about this authentic Pizza place.

Sitting in the restaurant basically means sitting in the kitchen. Surrounded by Pizza boxes, Pizza trays, Containers filled with sea salt or flour (both imported from Italy), fresh basil, jars with crushed tomatoes (also imported from Italy), Buffalo Mozzarella and High Quality Olive Oil; the atmosphere is quite different from a traditional (American) Italian restaurant or a traditional restaurant in general.

The Seating arrangements also differ from common intimate table set ups. Instead of sitting on tables that are meant to be for small groups or couples, Antico Pizza encourages it’s visitors to engage in conversations with each other by providing bench seating. Of course there is you don’t have to talke to your table mates, but you might as well!

Although, others might disagree, I think Antico is a great date location. Maybe not for valentines day or an anniversary dinner, but Antico works quite well for other date occasions. With its bring your own alcohol policy (no corkage fee!) whoever brings the wine (or beer if that’s what you’re into) can show some sophistication.

Sharing a pizza is another good plus, in my opinion. It’s romantic. Maybe keep the feeding each other for later times, though. Also, you’ll learn something about the other person and how they make decisions. You know what I’m talking about. The “I don’t care, you just pick something” type. Annoying. And by sharing a pizza you might also learn how much of a gentleman (gentlewoman) your date is.

It’s fun, because you get to see how the Pizza is prepared. It gives you something to do or talk about for those awkward silent moments. Another factor that contributes to why I think this is a good date spot, is the fact that they have very nice music playing in the background. The Frank Sinatra and Dean Martin type of music. It’s pleasant. It’s romantic. Occasionally you’ll see crazily romantic couples dance in between the tables.

Oh, and just to emphasize how good this pizza is, check out the yelp reviews for Antico Pizza. How many restaurants have 4 and a half stars and over 500 reviews? Probably not many. The pizza at Antico is original Napoletana style and follows the strict guidelines, established by the Associazione Verace Pizza Napoletana. These guidelines include the requirement that only “fresh, natural and untreated and/or genetically unmodified ingredients” are accepted. Health nuts: It’s good for you!

Those in the New York or Chicago area probably know about these rules. Northerners tend to have better access to Napoletana Pizza. Although even in the North you often have to wait quite a while to get a seat at one of these registered Pizza places. That’s how good they are.

So, go to Antico Pizza if you live or visit Atlanta. Go on a week night or at lunch time to avoid long lines, bring your own alcohol, and maybe a date or a bunch of friends! ANd have some fun and enjoy REALLY good Pizza!

Garlic and Bread. Garlic Bread. Need I say more? Sometimes food for the soul is all you need… Other times it’s just nice to have some garlic bread with your greens.

Well, and aside from being delicious, Garlic bread also helps with getting in the mood for fall, which according to the calendar has now officially arrived. Atlanta, though, seems to not have gotten the news and continues to have temperatures in the mid 80′s.

So, some nice crusty, hearty garlic bread sets the mood for fall without being too in your face. You know like dishes that scream fall. Sweet potato casserole, pumpkin soup, apple pie, and stews I’m talking about you. Actually I’m kind of excited about all of the above. But we’ll get to them later. For now it’s just garlic bread.

There are all kinds of garlic bread recipes, which is sort of strange considering that garlic bread should be rather simple and straight forward. But maybe that’s just kind of how it goes, things that should be simple and straightforward tend to offer a lot more room for different options. At least complicated things like Coq au vin are set in stone and don’t really offer much room for adjusting.

But then again garlic bread is garlic bread is garlic bread. Well, as long as you have garlic and bread. It’s really more about preferences and experimenting to find out what you like. Kind of like choosing an ideal partner. It might not be so hard to find a decent one to begin with, but coming upon one that actually satisfies what you’re really looking for, probably takes some time (and experimenting). If you find that special one though, you will probably want to have it EVERY single day. With pasta, with salad, with soup, with chicken, with fish or all by itself. Garlic bread. We’re still talking about garlic bread.

Let’s talk about the options again since you might not know what I’m talking about after all the rambling… Here is a list with all the options because I love lists.

1. Soft vs. crunchy

2. Smushed garlic paste vs. Chopped garlic pieces vs. Full on garlic slices

3. Butter vs. Margarine vs. Olive Oil

4. Fresh Garlic vs. Jar garlic vs. Garlic Powder

5. Add in dried herbs vs. Add in fresh herbs vs. no herbs

6. Top with cheese vs. no cheese

That should be it. Told you. Lots of options. By the way this garlic bread is delicious with some salad with bacon vinaigrette.

The following is just my favorite recipe. But as I said, lots of room for experimenting.

Garlic Bread (about 8 servings)

- 5 garlic cloves, chopped

- 3 tablespoons of olive oil

- 1/2 stick of butter

- 1 teaspoon of salt

- 1/2 teaspoon of pepper

- 1 teaspoon of garlic powder

- about 8 – 10 slices of thick cut bread

Preheat the oven to 400 degrees Fahrenheit.

Mash chopped up garlic with salt, pepper and garlic powder.

Add softened butter and continue mixing together with a fork.

Pour the oil over the butter mixture and continue incorporating.

Chill the garlic butter/oil in the freezer.

Put the bread on a baking sheet and transfer to the oven.

Toast the bread for about 10 minutes.

After the bread is toasted, cover each slice generously with the chilled garlic butter/oil and toast in the over for another 5 minutes.

Tip: For a softer garlic bread, avoid slicing the loaf of bread all the way through. Put about 1 teaspoon of garlic mix between thick cut slices and wrap loaf in aluminum foil. Bake for about 10-12 minutes.

Guten Appetit!

I hear college football is back. Not that I know anything about College football, but I know what people eat during (college) football games. Well, at least I think I do. Wings are a popular Football watching food. So are potato salad, pizza, tortilla chips and 7 layer dip, fries, burgers, and crudites.

And then there is chili.

Warm, hearty, meaty, chili with a little bit (or a lot) of spicy-ness. Traditional beef chili is pretty good, but so is chicken chili! And if you’re going to sit on your behind for 3 plus hours chicken might be a better option for hips and buttocks. My chicken chili recipe is pretty healthy I would say, since it’s full of vegetables and chicken.

You want to know something else that’s great about chili? It just keeps getting better. Well, at least for the first few days…

Also, chili is super easy to prepare in a slow cooker. (I LOVE the slow cooker, remember?) Just throw everything in the crock pot and you’re good to go. I made this particular chili at 5:30 and we at at 8. That includes two hours cooking time. Pretty neat, right? We also had some the next day for lunch and it was even better then since it had been cooking over night.

Some people like plain chili. You know, the kind that has meat, spices and crushed tomatoes in it. Nothing else. Those people are called boring. Those chilis are called plain.

Some things are good plain. Like plain tomato sauce, that’s stripped of vegetables and only has tomatoes, garlic, salt and pepper and some basil. Delicious. Chili, on the other hand, needs things in it, I think.

And by things I mean “whatever the hell you can find in the vegetable drawer of your refrigerator.”

Chili is also great because there is no need for making sides. A bowl of Tortilla chips and you (and your guests) are set.

If you’re feeling fancy you could always add bowls with toppings; like sour cream, avocado slices or guacamole and maybe some hot sauces.

This last chili I made served a number of purposes. Neither of them involved football in any way. I made chili because I had chicken and vegetables, because the boyfriend and I like spicy things and because I love the slow cooker and anything that’s prepared in the slow cooker.

Oh, and here is another hint: If you don’t want to buy all the individual spices, use one of those chili packages that already have all the different spice packets in it. I like five-alarm-chili. If that’s not available, three-alarm-chili is good, too.

So here is how I make chicken chili:

First the chicken is pan fried in some olive oil, because I don’t like the idea of having raw chicken touch the vegetables. At least not in chili. And I like the sort of fried taste of the chicken.

Then all the chopped up vegetables are fried in the same pan that the chicken was cooked in. Vegetables such as onion, corn, celery, and peppers. You get the idea. Mushrooms and beans are also popular and seen in many chili varieties. Not in this one, though. As I said before, really anything you can find and that looks like it might work, probably will work.

Set the crock pot on medium high and pour a large can of crushed tomatoes and about 4 cut up fresh tomatoes into the slow cooker while frying the vegetables.

Add some Masa flour (or a little bit of regular flour) to the tomatoes and mix in the chicken.

Add all the fried vegetables to this mixture and stir for about two minutes.

Add the chicken broth and the spices. Mix some more, and then the top goes on so that everything can simmer for at least two hours. Even better, over night!

And that’s already it. Now all you have to do is wait. Go and invite some friends over for dinner. Or invite them to watch a football game the next day if that’s your thing.

Chicken Chili Recipe

10. Cover and let simmer. (2-5 hrs on high heat, 5-8 hrs on medium heat or 8-12 hrs on low heat)

Guten Appetit!

Hello Skinny jeans, boots, cardigans, scarves, fur jackets, blazers and everything else that comes with colder weather! Hot chocolate and peppermint schnapps? Well, yes of course! Brunswick Stew, Pumpkin Soup, Christmas cookies, Turkey, Sweet Potato Casserole! I can’t wait!

But before we get there, a few days of summer are left. A few more bright, colorful, hot, humid, joyful, sunny leftover summer days.

I had a good summer. No, I had a great summer! I didn’t go on any fancy vacation, but had something to look forward to all summer long. There were lots of fun events and activities. Lots of delicious desserts and some good savory meals. I realized I have great friends. The kind that you get a long with well and communicate great with even though you haven’t seen them in a while. There are also a few people that are just like family even though they aren’t blood related. they wash your head and yet love unconditionally.

It’s thanksgiving in a few months. I’m thankful for summers.

What was your summer like? Tell me about it! A few key words, that’s all. Or one special summer memory? Tell me something about summers!

This was my summer:

Dinner picnics!

Turns out stand up jet skiing isn’t all that hard, and quite fun!

Late Night Concerts at the Tabernacle:

Strawberry infused Makers Mark. Or burbon infused strawberries, which are, in the words of ou rfriend Austin, like “eating a shot.”

There was a graduation, too!

Lots of free-form pies filled with everything from apricots, strawberries, raspberries and blueberries to blackberries, plums and pineapple.

Oh, and then there was birdy, who loved sitting on fingers and shoulders and who left lots of little gifts all over the condo.

Many evenings were spent at Atlantic Station’s little park area, enjoying concerts, free movie screenings and even yoga lessons.

A great aspect of summer: wearing summer dresses, without having to carry a jacket around or wearing (itchy) tights!

However, I’ve found a movie that has not only made me cry, it’s made me not care to admit it.

Senna, an amazing new drama/documentary, chronicles the rise to fame of arguably the greatest driver to have ever lived, Ayrton Senna da Silva . His talent, passion, and charity made him a national hero in Brazil, as well as an idol to millions around the world.

Many people may not know who this three-time Formula 1 World Champion was. Their lives are incomplete. He is, nearly 20 years later, highly regarded as likely the best driver to have ever lived.

This documentary, structured as a drama, pulls the viewer in and introduces them to the political and highly competitive world of Formula 1. It does so during the late 1980′s; a time that happened to be packed with some amazing drivers.

The viewer is sucked into the dangerous world and follows Ayrton in his challenges on the way to the top. The amount of personal video and audio recordings is astonishing. There are only a few interviews that were recorded for the purpose of this film. It’s absolutely amazing.

The driver briefings and much of the additional footage was never aired. A large portion of the remaining film has never been seen since it aired on TV in the 1980s. It certainly takes the viewer to the place and time. You feel tense as if your are sitting in the room yourself.

Along the way, you learn what this man meant not only to the sport, he was constantly fighting for improved safety, but his country as well.

His huge heart sparked his compassion for his country. It’s estimated that during his lifetime he donated around $400 million, without any popular recognition. He had also created the basic structure of what would become Instituto Ayrton Senna after his death.

As the movie reaches its end, one can’t help but personally feel the devastation of his loss. It crushes the heart and the soul. It hurts to see so many affected by one man. At the same time, it inspires ambition. It surfaces questions one often doesn’t ask his/herself.

This movie is well worth seeing. And more than once. But act quick. It’s likely showing near you soon, and won’t stay long.

[chris]
